Bertrand Chemel's lakeside dining room folds three courses into $65, opening on Maryland soft shell crab tempura, yellowfin tuna tartare, American wagyu tartare or a chilled FJ Medina Farm tomato gazpacho served with toasted bread ice cream. Entrées run to grilled branzino in lobster sauce, an Allen Brothers ribeye, braised pork cheeks over parmesan risotto or a San Marzano tomato and fennel raviolini with burrata, and dessert is peach melba pavlova, strawberry cheesecake or chocolate toffee.
