Chef Rupa Vira's Ashburn dining room opens its $55 Restaurant Week dinner with a daal cappuccino finished in toasted cumin foam, then a choice of tandoori paneer in saffron cashew gravy, lemon garlic butter lamb chops, or spice-crusted shrimp in coconut moilee, all served with garlic naan or rice. A gajar halwa cheesecake closes it, and a second course of Awadi croquettes or a moongdaal chilla taco is available for ten dollars more.
