Tysons' Wagyu grill builds its $65 dinner around a choice of hanging tender, boneless short rib, outside skirt or marinated galbi, opening with a moo-ssam of pickled radish and poached shrimp. A shared appetizer, a side, a savory course of doenjang jjigae or chilled buckwheat noodles, and a dessert of yuzu cheesecake or melon bingsu round it out.
