Yume opens its $65 dinner with a bump of Hokkaido uni or French caviar under 24K gold, then moves through a beetroot salad, a tataki or carpaccio of bluefin tuna, yellowtail or salmon, four pieces of nigiri or sashimi, and a choice between The Winner (bbq eel, ankimo, bluefin, caviar, truffle) or a lobster volcano roll, closing on the ice cream flavor of the day.
